Delicious Creamy Chia Oatmeal with Chocolate Mousse and Raspberries

Hey loves I am so happy to share another great recipe I experienced with lately! This decadent breakfast dish combines all the most delicious flavours in one. I mean, who doesn’t love peanut butter, chocolate, vanilla and raspberries – they work so great together, trust me! And what’s the best about it is that it provides a lot of fibre, protein, vitamins and healthy fats! It’s super nutritious, tasty and will give you the power you need to start your day in the most healthilicious way! So let’s do it!

Ingredients: (makes 2 servings)

INGREDIENTS

Creamy chia oatmeal:

• 1/2 cup porridge oats

• 1 tbsp chia seeds

• 3/4 cup hot water

• 3/4 cup almond milk

• 1 tbsp peanut butter

• 1 smashed ripe banana

• 1 tbsp sweetener of your choice

• 1 tsp maca powder (optional)

• pinch of himalayan salt

Chocolate mousse:

• 1 ripe avocados

• 1 ripe banana

• 2 tbsp unsweetened cacao powder

• 1 tbsp sweetener of your choice

• 4 tbsp coconut milk

• 1 vanilla

Method

In a small pan combine the oats and chia seeds, puor the hot water and let soak for 10 minutes (all the liquid will get absorbed).

Add all the remaining ingredients, stir well, bring to a boil and let simmer for few minutes, until the porridge is creamy and thick (stir frequently). Let cool down.

Prepare the chocolate mousse – put all the ingredients in a food processor and blend until completely smooth and creamy.

Transfer the oatmeal in two bowls or jars, top with some raspberries and then add the mousse and optionally some more fresh raspberries. You can also add some more peanut butter, coconut flakes and dark chocolate shavings if you wish. Enjoy for yourself or share with a favorite person! ♥
