I’m obsessed lately with doing beautiful healthy and delicious breakfast, because I think this is the most important meal for the day, so I just wanted to share with you the breakfast I did last weekend and I’m gonna repeat this weekend again.
Those coconut banana delight pancakes were so-o-o good, trust me!
100% vegan, 100% dairy-free, 100% gluten-free, 100% easy to do and so delicious!
I just had a coconut water left from 2 coconut milk cans as I used only the cream after refrigerated them for doing a raw cake cream (the recipe will be also shared soon) and I used it for doing those pancakes. You can do the same if you have a left over coconut water or use a regular coconut milk. It will work both ways. 🥥⠀
So here’s the recipe, do it this weekend, I promise you would not regret it.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 ripe banana
1 tbsp chia seeds
1/2 cup coconut milk or left over coconut water from 2 coconut milk cans
1/2 cup coconut flour
3/4 cup coconut flakes
1 tsp baking powder
pinch of pink salt
1 tsp coconut oil
In a large bowl, mash banana well. Mix in coconut mylk, chia seeds and vanilla. Add coconut flour a pinch of pink salt and baking powder and stir briefly to combine. Add the coconut flakes last. The mixture should be thick but pourable. Heat up a small non stick frying pan to a medium heat with a little coconut oil. Pour in 1/4 cup batter per pancake, flipping when bubbles appear. It’s done! Serve with fresh fruits of your choice. Enjoy! 👅
